Culinary Expedition: Farm-to-Table Dining

Take a culinary expedition of Northern Utah’s locally sourced food, designed and prepared by the Snowbasin culinary team in four courses. Talk with the purveyors of these delicious local items and discuss why local is better!

The menu will include a local cheese plate from Gold Creek Farms in Kamas, Utah, Smoked Duck Breast Glazed with Slide Ridge Honey and salt harvested from the Great Salt Lake, Mountain Valley Trout from Smithfield, Utah, a Yak, Apple & Gorgonzola Meatloaf with spicy bourbon peach glaze with Yak from Yakety Yak Farm in Huntsville, Utah, and more. All produce will be sourced from local farm stands and Borski Farms in Kaysville, Utah. Purveyors include Borski’s Farm Produce, Morgan Valley Lamb, Fog River Salmon, Beehive Cheese, Gold Creek Cheese, Daily Rise Coffee Co., Lehi Roller Mills, Creminelli Fine Meats, and Cox Honey Farms.

Culinary Expedition: Wine Maker’s Dinner with Iron Gate Wines

THE WINE MAKER’S DINNER HAS BEEN POSTPONED TO SEPTEMBER 5TH

 

Part of our Culinary Expedition: Spirit & Food Pairings, the first Wine Maker’s Dinner will feature Iron Gate Wines from Utah. This is a unique opportunity to learn about wine from the person who knows them best, the wine maker.

The meal is perfectly paired with a flight of wine, expertly chosen by the wine maker himself. The meal includes hors d’oeuvres while meeting the wine maker, a presentation of the wine flight by the wine maker, followed by a four course dinner paired with the wine. The Wine Maker’s Dinner is $75 per person and includes the suggested paired wines, taxes, and gratuity. Wine from Iron Gate Wines will also be available for sale. The Wine Maker’s Dinner presented with Iron Gate Wines will be Friday, September 5th at 6:00 pm.

Dining Discovery: Shellfish Cooking Class

Learn about purchasing, preparing, cooking, and eating wonderful items from the sea such as lobster, clams, mussels, oysters and shrimp!

Learn how to:

  • Properly clean and inspect shellfish
  • Prepare ingredients using multiple techniques such as boiling, broiling, steaming & sauteing
  • Pair shellfish with various herbs, vegetables, and starches
  • Prepare cocktails that compliment these wonderful treats from the sea

A ‘mocktail’ bar will be available for learning how to make and taste cocktails at no cost and the same real cocktails will be available for purchase.

The shellfish cooking class will be just $45 per person and includes all food and ‘mocktails’.

It will be at Earl’s Lodge at 6:30 pm on July 18th, 2014.

The menu will include fresh shaved fennel, fig and mozzarella salad, Greek salad, grilled baby artichokes with green olive dip, lemon-stuffed grilled Branzino, herb grilled lamb chops on a bed of mint and arugula couscous, seafood paella, steamed mussels, and chef carved red wine braised flank steak stuffed with asparagus and ricotta and many more traditional Mediterranean dishes. Live entertainment from Bradley Quinn Lever and Tracy H. Cope.

Bradley Quinn Lever is a classically-trained, contemporary pop singer who performs live musical theatre. He most recently performed at Hale Centre Theatre in “Les Miserables,” as the revolutionary leader Enjolras. Favorite roles include Disney’s Tarzan and Joseph. You may also recognize him from Michael McLean’s “The Forgotten Carols” tour as the lead vocalist. “Music expresses that which cannot be put into words and that which cannot remain silent” – Victor Hugo.

Tracy H. Cope  has played and worked for over 40 different shows including: The Radio City Rockettes, PTC, Rodgers, Temple Square, Ed Kenley Centennial Amphitheater. Tracy has enjoyed playing for Snowbasin for many years.  She also has played for the Miss Utah Pageant, local hospitals, WSU, recording studios, U of U, rock bands, retirement homes and weddings.  She also loves to ski and ride her unicycle!

Dining Discovery: Explore your Cravings

We are revamping our summer dining with the new Dining Discovery: Explore your Cravings program. The Dining Discovery program will encompass many aspects of dining at Snowbasin Resort and include Culinary Expeditions, Cooking and Eating Classes, Mountain Top Brunches,  Burger Spa, and Spirit & Food Pairing Series.

The Dining Discovery: Culinary Expedition dinners will replace the weekly Saturday night dining at Needles Lodge, with several events throughout the summer, each with its own theme. These top of the gondola dinners are an exciting and unique experience, with live music and atmosphere to give a taste of the culture that encompasses the designated cuisine.

Desert Noises

Desert Noises is Kyle Henderson, Tyler Osmond, Patrick Boyer, and Brennan Allen, four adventurers from Utah Valley, UT. Ask about their recent musical influences, and you’ll extract a litany on the riches of Tom Petty, Fleetwood Mac, and Tame Impala. If it seems an unlikely trio of choices, it simply means that you haven’t yet become acquainted with their propulsive, jangle-rich breed of rock ‘n roll. Desert Noises make music for shouting into canyons, jumping into rivers, and getting married to the wide-open road. With a strong maturity in their songwriting, they conjure the majesty of the American pastoral landscape.

While one can pick out definite strains of blues and Americana, their often-ferocious delivery and penchant for shredding guitars elicits a powerful transcendence into psychedelic rock.
